- Unjha Fennel (Variyali) is cultivated in the designated geographical region of Gujarat, at elevations of up to 400 feet above sea level.
- It thrives in a Mediterranean climate with mild winters and hot summers, requiring an optimum temperature of 15-25°C.
- The crop grows best in well-drained loamy soils rich in organic matter, with a soil pH of 6.0-7.5.
- Unjha Fennel is known for its distinctive sweet aroma and flavour, attributed to its high concentration of volatile organic compounds, particularly anethole and cis-anethole.
